As a child, I grew up eating fudge, A LOT. It was that one thing which was always at home. My grandmother would make them and sell them to the students who lived in the hostel just across the street from our house. That, along with vetkoek, was her side hustle and when I was about 8 years old, it became my side hustle as well.
The traditional way of making fudge requires you to stand in front of the stove, stirring it constantly until it’s done so that it does not over caramelize on the bottom. This recipe is different and so much easier as it is done in the microwave. Yes, i said microwave. You combine all your ingredients in a bowl, pop it into the microwave and stir every 3 minutes. If the fudge looks like it’s bubbling up too quickly, just open the microwave to interrupt the cooking process and let it continue cooking again.
Since it was my first time making fudge in the microwave, I made a small mistake. I forgot to add the milk at the beginning of the process with the rest of the ingredients. I quickly realized this when, after 12 minutes or so, the fudge started looking a bit too gritty. That is only when I added the milk. I would however recommend that you also do it this way as it believe that it melts the sugar better.
Also please remember that fudge is very calorie dense as it contains a lot of sugar, so if you do make some, enjoy modestly.

- 2 cups sugar
- 1 tin 385g condensed milk
- 100g butter
- 1/2 cup milk
- 2 tbsp vanilla essence
- Pinch of salt
1. In a microwave safe bowl, combine sugar, condensed milk, butter and salt. Cook it in the microwave for about 18 minutes, removing the bowl to stir after every 3 minutes.
2. After about 12 minutes of cooking, when the fudge starts to look gritty (as indicated in the 1st picture below), add milk and stir to combine well.
NB: Please do no add the vanilla essence at this stage.
3. Continue cooking it for the last 6 minutes while still stirring after every 3 minutes.
4. When the fudge is done, add the vanilla essence and stir until evenly mixed. Pour it out into a buttered or parchment lined pan and let it cool for at least 20 minutes.
5. Cut into equal blocks and let it cool for another 20 minutes before removing from the pan.
6. Enjoy modestly.
