What’s summer without fruit salads? Relax and enjoy the taste of summer with these 3 easy salad recipes!

Fruit Salad

NB: We leave out bananas in our fruit salads because of the overpowering banana flavour being absorbed by the other fruit. You can add banana if you wish!

Ingredients

  • Use any fruits you like
  • 3 tbsp honey
  • 1 tbsp squeezed lime juice
  • 1 tbsp pineapple juice (from canned pineapple) or any fine juice of your choice (Substitution: Vanilla yogurt)

Instructions

  1. Place prepared washed and sliced or diced fruits in a large salad bowl.
  2. Using a measuring jug, combine the honey, lime juice and pineapple juice. Pour the syrup through the fruit and mix well. Mix the juices accumulated at the bottom of the bowl once again before serving if you’re not serving the salads immediately.

Greek Salad

Ingredients

  • 1 large cucumber, slice
  • 1 1/2 cups grape tomatoes
  • 1 cup (160g) olives
  • 1 medium red onion, halved, thinly sliced
  • 1 green pepper
  • 2 tbsp red wine vinegar
  • 1/3 cup feta cheese, crumbled
  • 2 tsp olive oil
  • 1 tsp dried basil

Optional

  • lettuce
  • 1 tsp Greek oregano

Instructions

  1. Wash and chop the green pepper and cucumber into bite-sized pieces at add them to a large bowl. Slice the red onion and add that too, along with the grape tomatoes.
  2. Add the red wine vinegar, olive oil and oregano to the bowl with the veggies. Toss everything together very well.
  3. Add the crumbled feta cheese, and toss to combine. Sprinkle the olives over the top, and you’re done!

macaroni salad

Macaroni Salad

Ingredients

  • Elbow macaroni (obviously)
  • Sweet pickles
  • Red pepper
  • Celery
  • Red onion
  • Hard boiled eggs or shredded or diced cheddar cheese
  • A homemade mayo-based macaroni salad dressing or just pure mayonnaise 
  • Sliced viennas

Optional

  • Diced pineapples
  • Favourite additional add-ins

Instructions

  1. Prepare macaroni elbows according to package instructions. Drain and rinse immediately with cold water, then drizzle with a teaspoon of olive oil and gently stir so the noodles don’t stick together as they sit.
  2. In a large bowl, combine macaroni noodles, sweet pickles, red pepper, celery, red onion, and eggs. Stir until well-combined. Set aside and prepare your dressing.
